Food Network finds student “Just Sweet Enough”
Clayton College of Natural Health Student Glynis Albright, who is currently working toward a doctorate in Natural Health, will be featured on the Food Network’s “Road Tasted” on August 5th.
Glynis became interested in natural health after she was diagnosed with Leukemia and had to radically change her life. “My eating changed. What I ate, when I ate, and how I ate my food, changed,” she said.
Glynis began to prepare foods for people she met at her twice weekly doctor’s appointments, and they began to look forward to her delicious and nutritious gifts. “As my body began to change, I paid closer attention to the things that I needed and the things that I craved. You know, the things that really just made me feel better. Most people who I met were also going through gruesome tests - chemo, radiation therapy - and felt weak, lonesome and depressed. I tapped into those foods and decided to come up with a dessert line that stayed within certain health guidelines but tastes good,” she said.
Just Sweet Enough emerged from Glynis’ adversity. It was nurtured by the ongoing determination to help others to feel special, good, and healthy. “I knew what nutrients I needed to have in my diet to produce good health. Although I was really ‘going through it,’ I felt the least I could do on my end was to fuel my body with the best wholesome foods that I could and to guard it the best I could against future dis-ease,” she said.
One of her first desserts was Sweet Potato Poundcake, which she will prepare on “Road Tasted.” People began to come from all over to get it. After a while, she was baking it almost three times a week in her own gourmet bake shop. Soon, Glynis began to make many other treats that were loaded with nutrients. All of the treats are lower in sugar, sodium, calories, and cholesterol than what is on most grocery store shelves.
“The key was that no one had to acquire a taste for my product,” Glynis said.
Although she stays busy running Just Sweet Enough from the Castle Creek Bakery in Castle Rock, Colo., Glynis also travels the world sharing her journey - and gourmet treats. Be sure to look for her on “Road Tasted” on the Food Network August 5.
