Herbal immunity day set for June 28th

Details: Join Herbalists Jim McDonald and Shawna Greenway as they explore how to use foods and herbs to build immunity from the our body’s core outward, rather than trying to kill bugs after they get into us (though they’ll probably elaborate on that a bit, too). Jim will be be teaching the intensive in the morning and afternoon, and two hours will be spent with Shawna discovering wild plants as food for immunity, as well as explore green lifestyle medicine and ways to nourish our immune system.

They’ll cap off the day with a hands-on creation of an immune system medicine from the green abundance on the farm.  A whole and wild foods lunch will be served at noon.

Food Network finds student “Just Sweet Enough”

Clayton College of Natural Health Student Glynis Albright, who is currently working toward a doctorate in Natural Health, will be featured on the Food Network’s “Road Tasted” on August 5th.

Glynis became interested in natural health after she was diagnosed with Leukemia and had to radically change her life. “My eating changed. What I ate, when I ate, and how I ate my food, changed,” she said.

Glynis began to prepare foods for people she met at her twice weekly doctor’s appointments, and they began to look forward to her delicious and nutritious gifts. “As my body began to change, I paid closer attention to the things that I needed and the things that I craved. You know, the things that really just made me feel better. Most people who I met were also going through gruesome tests - chemo, radiation therapy - and felt weak, lonesome and depressed. I tapped into those foods and decided to come up with a dessert line that stayed within certain health guidelines but tastes good,” she said.

Just Sweet Enough emerged from Glynis’ adversity. It was nurtured by the ongoing determination to help others to feel special, good, and healthy. “I knew what nutrients I needed to have in my diet to produce good health. Although I was really ‘going through it,’ I felt the least I could do on my end was to fuel my body with the best wholesome foods that I could and to guard it the best I could against future dis-ease,” she said.

One of her first desserts was Sweet Potato Poundcake, which she will prepare on “Road Tasted.” People began to come from all over to get it. After a while, she was baking it almost three times a week in her own gourmet bake shop. Soon, Glynis began to make many other treats that were loaded with nutrients. All of the treats are lower in sugar, sodium, calories, and cholesterol than what is on most grocery store shelves.

“The key was that no one had to acquire a taste for my product,” Glynis said.

Although she stays busy running Just Sweet Enough from the Castle Creek Bakery in Castle Rock, Colo., Glynis also travels the world sharing her journey - and gourmet treats. Be sure to look for her on “Road Tasted” on the Food Network August 5.


Student featured on “Reality Sandwich”

Clayton College of Natural Health student Matthew Sluder recently appeared as a guest on a radio program called Reality Sandwich.  This particular show is focused on discussing a proposed plan to spray untested pesticides over urban populations through out the San Francisco Bay Area in an attempt to eradicate the light brown apple moth.  Sluder was asked to share a little bit about the emerging field of epigenetics and generally how chemicals interact with our genes. Arizona student offers free detox classes

Graduate’s book aids in healing

holdsworth_0308.jpgClayton College of Natural Health graduate Noel Holdsworth’s book “If You Stand in the Middle, You Won’t Fall Down: Letters of Healing from Eloise and Jake” aims to ease readers’ journey toward healing. The book is written in the form of letters from Eloise with postscripts from Jake. Eloise and Jake are fictional amalgams created from years of listening to people’s stories, and finding the common themes in their struggles. Even though they are fictitious, Eloise and Jake tell the stories of real people and real victories over hardship and struggle.

Student published in The Herb Quarterly

Clayton College of Natural Health student Katherine J. Turcotte will be in the Spring 2008 issue of The Herb Quarterly for her article “The Glories of…Ground Ivy.”

Turcotte will also be featured on the cover of the upcoming Summer 2008 issue of The Herb Quarterly as part of a panel interview with five top herbalists - Rosemary Gladstar, Susun Weed, Gail Faith Edwards, Christopher Hobbs and Stephen Harrod Buhner.

Student publishes natural healing cookbooks

Simona Stepancic, a student at CCNH and Registered Nutritional Consulting Practitioner, has recently published several cookbooks which focus on foods for natural healing. Her titles include “Food for Arthritis,” “Food for Energy & Mind,” “Food for Menopause,” “Food for Detox,” “Food for Candida,” and “Food for Osteoporosis.”

The books focus “on the raw nutritious super-foods that are available today,” and provide nutritional benefits for every type of illness. Stepancic recommends eating foods such as fresh fruit, vegetables, and sprouts that contain live enzymes, as well as unprocessed and unrefined grains and legumes. In addition, she recommends organically grown, pesticide-free foods grown without synthetic fertilizers or chemicals.
