Clayton College of Natural Health graduate Alain Braux is executive chef-nutritioniste for People’s Pharmacy, a small chain in Austin, Texas. Alain recently started a line of To Go Chef’s Specials especially designed for clients with Wheat/Gluten and Dairy/Casein allergies, and would like to develop a complete line of allergen-free food products for clients, or create customized menus for such clientele.
Alain also runs A Votre Sante (To Your Health), which helps mostly young customers with ADD/ADHD through proper nutrition and appropriate menus. Following in some of the most reknowned European doctors in nutrition, Alain offers recipes that are healthy (organic and local as much as possible) and hypotoxic.

Clayton College of Natural Health graduate George Rapitis, 2007 M.S. in holistic nutrition. Rapitis’ new book, The Lighter Side of Chocolate: Take It to Heart, sticks up for dark chocolate by exploring the health benefits of the cocoa bean. He researches all the way back to the Aztec Indians’ take on the cocoa bean as the cherished “food of the gods.” The book touches on chocolate’s impact on things such as blood pressure and cardiovascular disease by its powerful flavonoids that help promote heart health. Clayton College of Natural Health graduate Ritamarie Moscola, 2003 naturopathic medical doctor. Moscola had two proposals accepted for poster presentations, one being the result of asking seniors (>65 years) to draw a person to be presented at the 2008 Society for Arts and Healthcare meeting in Philadelphia, Pennsylvania. The other is a collage series that she created after visiting nursing homes and assisted living facilities. It will be presented at the 2008 American Medical Director’s Association meeting in Salt Lake City, Utah.

Clayton College of Natural Health graduate Mary Marsh, 2000 Ph.D. in natural health. Marsh is the author of Simply Natural, Natural Health Made Easy: 90 Ways to be the Healthy, Happy Person God Created You to Be. It is a Christian based book offering several self-help suggestions for people to improve their health, wealth, and relationships. Based on 15 years of research, Marsh has picked out the techniques that have been effective for her clients and family. Clayton College of Natural Health graduate Noel Holdsworth’s book “If You Stand in the Middle, You Won’t Fall Down: Letters of Healing from Eloise and Jake” aims to ease readers’ journey toward healing. The book is written in the form of letters from Eloise with postscripts from Jake. Eloise and Jake are fictional amalgams created from years of listening to people’s stories, and finding the common themes in their struggles. Even though they are fictitious, Eloise and Jake tell the stories of real people and real victories over hardship and struggle.

Clayton College of Natural Health student Katherine J. Turcotte will be in the Spring 2008 issue of The Herb Quarterly for her article “The Glories of…Ground Ivy.”
Turcotte will also be featured on the cover of the upcoming Summer 2008 issue of The Herb Quarterly as part of a panel interview with five top herbalists - Rosemary Gladstar, Susun Weed, Gail Faith Edwards, Christopher Hobbs and Stephen Harrod Buhner.
